El Triunfo has been baking on the south side since 1989. Founder Tanis Lona grew up in Guanajuato, and his wife Chuy brought her family's flour tortilla recipe. Along with pan dulce, it bakes buns for Sonoran hot dogs, including the ones at La Carreta del Rorro. Their son Joaquin runs it today. Pick up tortillas while they're still warm.
